Well, It started to work... With the Wine menu, at least. Now, I'll log off and on again to see if the changes I made in the other menus will work.
Nice folks, you did not help me too much, but it was a fun company to this trouble... :DDDDD

Maybe it's not much help because you're not following the advise given?

Worse, my friend. The advice I got here only made me walk on circles. But, while I was testing the advices, which are all in good faith, I have no doubt of it, I started to tinker with my hidden files... AND... BINGO!!! No, BINGO belongs to M$. GOOOOOGLE!!!! FOUND IT!
Now, all the apps work, and, I must say, it was this close to format and install again. No... No way Jose.
Now, what I did:

1-Don't touch /home/user/.config/menus
If you mess with those files, your apps menu vanishes and doesn't come back. I know because I did it...  :D.
2-Search for /home/user/.local/share/desktop-directories and delete all the .desktop files that are in this folder.
3-Search for/home/user/.local/share/applications and delete all the .desktop files that are in this folder. BUT NOTE, if you have WINE installed, there's a wine sub folder. That wine sub folder must not be touched. Leave it as it is.

And... Voilá... After these 2 simple steps, all apps are working. Don't ask me how, or what I did, I just know it worked, but I can't explain. If there's someone more savvy on Enlightenment, this person could explain.

And, so far, everything is 100% operational. Just the SYSTRAY issue is still bothering me... Any ideas ??? ?
And, BTW, thanks for all the comments. They helped me to see a way through all this mess... ;)

You can only help those who wants to be helped  and you are right, the company is good  ;D
I shall pass this way but once;
any good therefore that I can do,
or any kindness that I can show
let me not defer nor neglect it,
for I shall not pass this way again.

Ok folks, all solved. To fix all the problems with menus, do the steps I wrote b4. And note, if there's an app you installed and it does not show in the menus, check /usr/share/applications, which is the place where the .desktop files are located, and see if your app has a .desktop file configuration. Since E-17 uses the free desktop standard, it's common to Gnome, KDE and E-17 the .desktop configuration files.

Best regards,
