There's no need to add "Gnome" to your repo settings. The Gnome packages are available with the default settings.
Dolphin is a part of KDE4. It is in one of the base packages. To find out which one, in Synaptic, click Search and when it opens, click on Provided Packages in the drop down menu just under the search field. Searching for dolphin with this option will show you which package has it included.

Yes, there is a new menu structure. You could search out the menu files and try to make the changes you want. You could try a right-click on the menu button and see what options are available.

Hum,  I have e17 installed as well, and my menu is following the new kde4 structure.  XChat is not installed by default, but shows up in 'Internet' once installed.  e17 has some basic apps, but to keep it lean and mean (as the saying goes) we've kept apps to a minimum, allowing users to choose what they want instead.  Hope you don't mind. :)
