Do you have the LiveCD from your original install?  You could but to it, open Synaptic, and use the same trick to get the base install list.  Yes, the versions will be different but many of the basics should line up.  It would be a start, at least.

Maybe you should consider not updating that machine.
Quite obviously it is a vital machine and is working well with all your non standard changes.

I would say that if you have not kept a list of the various changes and apps etc you have installed then updating it will be a nightmare.

In the meantime, create a VM for 2010 and see if you can get it close to your install, keeping a list of the changes made.
If you get it right you can apply everything to a new install knowing that it is working beforehand ......  or create a remastered ISO and go a new install with all the changes already in place.
