Knife Sharpening (Revealing All My Secrets)

Umm,, I'm a knife guy,, bla bla bla.

In the past, I have tried to pass along info about how to sharpen a knife, how to use a "Water Stone" and how to find your edge's angle.

It is this last topic on which I want to share additional info.

*if you read my posts at all*, I told you how I usually find my edge angle by stroking the knife forward on a stone and slowly raising the knife's angle until it just begins to "bite" into the stone. Then, backing off just a bit to get the angle right.

Well, there is a different way to find that angle.  ;)

Take a "Sharpie" or some such "Permanent Marker" and mark the entire edge from the tip all the way down. Cover the entire edge.

*not the entire blade,, just the edge*

(remember, the edge is the part that runs along the entire length of the blade and is the part that forms a "V" on the sharpest part of the knife. Look close. This is the part that you are trying to sharpen.)  

Now, if you can find an angle on your sharpening tool that scrapes off ALL of that sharpie mark at the same time, you have found your angle.

Ps:  This only really works on a "Flat" edge (most come from the factory with a Flat edge)
you can guess from the diagram what happens to any other edge type.

When I lived in Chicago there was a knife man that came around every
summer, yelling    "sharpener"    "sharpener"   right down the sidewalk.

And for a small fee he would sharpen every knife in your kitchen set.
Same as if you took them to a hardware store to sharpen.

A foot pedal strapped to a large circular stone revolving round and round.
The circular stone was almost 2 feet wide.

After several or more minutes with each knife I'm sure you'd cut a turkey
with one light slice, of course as sharp as it could get.

I remember my brother and I as young boys buying our first knives on our own.

My Brother bought a Case "Sodbuster" It looked so cool. I bought a Buck Folding hunter.

We even bought a real good honing kit and were ready to go. The guy at the store talked us into buying a guide to clamp on the knives to give it the proper angle for sharpening. We both used it and it was ok but we went back to sharpening by hand. We became quite proficient and in no time you could shave the hair on your arm with knives we sharpened.

Lots of memories.

The sharpener that Rudge recommended in a previous thread is quite an improvement on the "old" days. I might give that one a try.

Hay Joe, if you give that sharpener a try, use painters tape to tape off the blade before you start.

Metal dust falls onto the blade and when you turn it over to do the other side,, bad things happen.

I have scratched the heck out of two of my favorites before I figured it out.

(I thought it was my stropping technique)  ::) ::)

Not ruined, tiny scratches.

It was going to happen because I actually use those knives. It just happened sooner than I would have liked. ;)

If you sharpen your knives by hand, this is what you will get.
