Oh, my! The BEST bacon I've ever made! Wow!

Cooking slowly on a medium heat AND using the 8-inch skillet as a bacon press made all the difference!
We're talking about 20-25 minutes to make the bacon. Start off in a cold pan. Line your bacon in the pan (I'm using a 12-inch cast iron skillet). Place the 8-inch skillet on top. St the burner to medium and cook ten minutes. After ten minutes, if bacon does not stick, flip. Replace bacon press (you can move it around a bit). Cook another ten minutes. No, remove bacon press. The bacon strips will be nice and flat and easy to manage in the pan. Continue to cook until nicely golden. Remove, enjoy, and save that bacon grease! Mine is in a mason jar in the fridge.
