Hi Rudge,
              I have purchased a set of German steel (X50) Kitchen knives, and a 1,000 / 3,000 grit combi whetstone (Naniwa) for when they need a touch up.

My question for you is:

In your opinion, would it be beneficial to go for an expensive (they all are) higher grit whetstone (say 8,000 or 10,000), or go to a strop after the 3000 grit stone ?

I have been trawling through you-tube vids and the jury seems to be out on the subject.

Some say go higher grit stone, others say it is just not needed, and that a strop can polish the edge easily from a 2000 or 3000 grit stone's finish.

I just cannot decide which way to go  :-\
