So he demonstrates how not to sharpen towards his hand .......  and does not show how to do it without putting his hand in danger .........  FAIL  IMO

Here is what I did to solve the problem.

I took a course stone and "rounded" off one of the edges of my water stone to make a "rod" out of that edge.

Works like a charm. ;)
