Looks like Cojack (Colby-Jack) I use a wire type cutter mostly on mine or a large chefs knife.
...and it tastes pretty good to me

Actually, the "harder" the cheese, the better a knife will cut it.

Softer cheeses almost require a wire. Not for the cutting part, but for letting go of the knife after the slice has been made.  


p.s. - if your knife breaks like this, it's not the cheese I would be worried about. You're using the wrong knives!

That is like the one I used to have. A wire does a great job. I like YCT's knife though too.

This is the one that my grandmother had. It still works as like it was new. You can adjust it for the thickness of the slice desired.
