This, as I'm sure Rudge would confirm, is why having the right knife for the job, and knowing how to use it, is so important. I was looking around the picture for any bits of left over fingers.  :-D

Looks like Cojack (Colby-Jack) I use a wire type cutter mostly on mine or a large chefs knife. ;)
...and it tastes pretty good to me ;D

Actually, the "harder" the cheese, the better a knife will cut it.

Softer cheeses almost require a wire. Not for the cutting part, but for letting go of the knife after the slice has been made.  ;D


p.s. - if your knife breaks like this, it's not the cheese I would be worried about. You're using the wrong knives!  ;)

That is like the one I used to have. A wire does a great job. I like YCT's knife though too.
