Don't worry JoeChimp I will make plenty bread tomorrow.  Will be making Bolillos, for making tortas. I just have to try it after seeing a post "crow" made about tortas.



Here are the Bolillos bread that I ended up making. They are about about 7 1/2 inches long by 3 1/2 inches wide



These are from a picture that I found of them on the web. I think my came out just fine when compared to these.



Now I just have to make my torta out of it

Grilled cheese could be a menu item for tomorrow.  :D

I just made a home made tomato soup that would go well with a grilled cheese sandwich Joe.

It was pretty easy to do.

The "main" ingredients are stewed tomatoes, sautéed (onions carrots and celery) a blender, some cream, some water (to get the consistency right) and some brown sugar.

You should be able to piece it together. ;)

It WAS worth the effort!  ;) ;D ;D

I think I will live on bread. :D

Making Bolillos reminds me of making Brioche only not as sweet


    8 3/4 oz (1 2/3 cups) all-purpose flour
    2 3/4 oz butter, at room temperature
    2 eggs, at room temperature
    1 dose dry baker’s yeast (1 Tbsp)
    2 Tbsp fine sugar
    1/3 cup warm milk
    1 pinch salt
    1 egg yolk for glaze

Steps:

In a bowl, mix the flour with the yeast, make a hole in the middle.
Add the warm milk mixing with the tip of your fingers (if using a stand mixer, pour the milk slowly and steadily while mixing, with the hook attachment.)
Add the sugar and a pinch of salt, then add the soft butter, piece after piece, waiting each time that each piece is absorbed.
Then one by one, add the eggs, mixing well between each. Work the dough until it is elastic and detaches from your fingers more easily (or from the bowl of the stand mixer).
Cover and let rest in a warm place, away from drafts, for two hours, until it doubles in size.
Work the dough again for 10 min and divide it in four balls. Place them in a greased rectangular mold and cover. Let rise for an hour again.
Preheat the oven at 400 F.
Brush the brioche with the egg yolk mixed with a dash of sugar. With a pair of scissors, make small cuts at the top of each ball.
Place in the oven to bake for 10 min then reduce the heat to 350 F and bake for about 20 to 30 min.
Remove, unmold and let cool on a rack.

Nutty Chimp Bread
(Monkey Bread Redo!)




Ingredients

    2 Cans Grands Honey Butter Layer Biscuits
    2 Sticks of Margarine
    1 Cup of White Sugar
    1 Tablespoon Allspice
    1 Tablespoon Nutmeg
    About 1 cup of chopped Pecans


Instructions

   1)   Separate your ten biscuits into 20 smaller ones. Roll each piece into a ball.
   2)   Combine Sugar and Spices in a ziplock.
   3)   Working with a few balls at a time, stick them in the ziplock and shake to coat the balls in the spice and sugar mixture.
   4)   Place ½ of the coated dough into a bundt pan and sprinkle about ½ of the chopped pecans over the top.
   5)   Then sprinkle a few tablespoons of the mixture over the top.
   6)   Melt 1 stick of margarine and pour over the top of all this.
   7)   Repeat steps 3-5 with the remaining dough.
   8 )   Bake at 350 for thirty minutes.
   9)  Let sit about 5 minutes before turning out onto a plate.
         ENJOY!

I love eggs! Scrambled eggs and omellettes of all sorts.

But for Christmas morning I make a special breakfast casserole for a number of years based on a Thanksgiving Casserole handed down by my "sister-in-law".

1 1/2 pounds of breakfast sausage , browned, drained and crumbled. (Here in Vermont we have McKenzie's sausage.)
6 slices of bread, cubed...dried ( Freihofer's Sour Dough)
1/2 pound of shredded cheese (Cabot's Seriously Sharp Cheddar)
3 cups of milk ( I go with 1 1/2 cup of Hood's Half and Half and 1 1/2 cup of whole milk)
9 eggs

Directions:

Place bread on the bottom of a greased (Crisco) 9 X 13 baking pan (I use Pyrex).

Top with sausage.

Sprinkle with cheddar cheese.

Combine eggs and milk mixture.

Pour milk mixture over bread, sausage and cheese.

Cover with plastic wrap and let set overnight. (Very important)

Bake at 350 degrees for 50 minutes.

Edit: Be aware that this casserole is somewhat like a souffle; it will fall once removed from the oven.

You should wait about 5-10 before serving.

Understand that I am not much of a cook; but I strive to make this casserole better every year.

You will find similar versions elsewhere. I like mine because of many Thanksgiving/Christmas memories.

Me too !

Used to go to a breakfast where they made something
like that every week.   Used cream cheese instead of
cheddar and a little less milk I think.

Thanks YCT for the bread recipe :) It looks delicious. I have a bread machine so I'm gonna make some kind of bread in the near future.

This week I made Bread Pudding from some of the old (store bought) bread crusts I had saved. It's pretty good with sweetened vanilla milk. Some people make a sauce with booze of some kind but as kids we always ate it with milk. I would post a recipe but there are so many variations available on the web.

Funny thing about eggs.

You would think that cooking an egg would be cooking an egg.

But to get eggs really cooked correctly is way trickier than most people assume.

Most people over cook their eggs by quite a bit. Even popular restaurants commonly over cook eggs.

A properly cooked egg is a beautiful thing.  ;D

Amen to that!

A properly scrambled egg should be light and fluffy, with both yellow and white bits showing, and a slightly glazed look. Too many times I see dry, over beaten, overcooked. solid yellow lumps being served, reminiscent of dried cat turds in a litter box.

If you can't cook them, don't serve them!
