Breakfast, What did you have
« on: December 26, 2012, 03:03:17 PM »
Mmm Mmm

a couple of farm fresh eggs, fried home grown potatoes with onion and a couple slices of home baked cheese and onion bread, along with lots of coffee. Didn't last very long. Can hardly wait for supper time.

It's funny that you post a breakfast thread.
I had every intention of doing that this morning, really.............the best laid plans aside. The need to eat it outweighed the need to take a  picture.  ::)
I honestly was going to do that but your breakfast looks soooooooo much better.

All I had was banana pancakes. I was also going to make home made biscuits with homemade sausage gravy but that would have been too much. Tomorrow brings that treat. Homefries and eggs may accompany that with of course coffee.

By the way YCT, those home fries look amazing. My huge breakfast weakness is good home fries. I have been know to go to a place that serves great homefries and just order a double or triple order of home fries with coffee and toast.

I am now officially hungry again.  :D

YCT, that looks awesome! It has me overlooking the fact that you have potatoes AND toast but someone is going to have to point out the "elephant"...

No bacon?... Really? At this forum?  ;D

OK back to the drooling. LOL

Lots of leftovers so I made several turkey sandwiches  (tortas de pavo). Turkey (of course) heated in butter, Gouda cheese, avocado, lettuce, tomato and onion in a roll with mayonnaise and mustard. A good portion of home made fruit cake.

All with a couple of cups of coffee.

Tomorrow could be sandwiches of turkey or ham with pineapple, or both  ;D

I bought a cabrito and cut it in pieces, is not alone in the fridge, my brother in law gave me a good sea bass and I have plans for both ::)

The tortas are something like this:

Rudge - I am learning to cure my own bacon and I didn't want to buy the store bought stuff. Sadly the bacon isn't ready yet.

JoeChimp - The other night I made BBQ short ribs, threw on some corn on the cob and potatoes.  Those were what was left of the potatoes. It is amazing how the smoke in the potatoes made them taste this morning.

Yes, a good country gravy would of went well with this. Darn, wish I would of thought of that when I made it!!!!!!

Darn crow, them things look really good. I am going to have to learn to make that style of bread. Until them I guess, I will just have to go down to the corner to the little Mexican shop.  I am going to give making the bread a try this weekend, we'll see how it goes.

Old fashioned way.....  I'm not really a baker so I never made enough bread to justify getting a machine....

Old fashioned way.....  I'm not really a baker so I never made enough bread to justify getting a machine....

 ;D ;D ;D

3 cups AP flour
1 tablespoon instant yeast
1 tablespoon sugar
1 teaspoon salt
1 tablespoon oil or shorting
1 egg
3/4 cup warm water     *** Do not use HOT water
1/2 cup small cubed cheddar cheese
1/4 cup diced onion  -  use green, yellow or red onion, which ever you perfer

Combine flour, salt, sugar, oil and egg.  Add yeast and warm water mix together to form a ball. (Dough will pull away from mixing bowl) Knead dough. If kneading dough by hand, knead for 10-15 minutes till elastic.  If using a mixer knead for 5 minutes. If using a bread machine, use machine instructions for your machine. Place dough in a oil bowl and cover with a moist tea towel and set aside in a warm draft free area for about 1 hour, or till dough doubles in size.

On a lightly floured counter punch down dough and add knead cheese and onion into dough. Don't overwork the dough. Form dough into a loaf shape. Place newly formed loaf into a lightly oiled bread pan, or a parchment lined baking pan. Cover with a moist tea towel and set aside in a warm draft free area.  Let proof (rise) for 1 hour or until the top of the loaf has doubled in size or is 1 inch higher then your bread pan. After 20 minutes of proofing this time, preheat your oven to 350 degrees.

Bake your bread in a preheated oven for 20-25 minutes. Let bread cool 10 minutes before slicing. Caution cheese will still be gooey and hot!

Loafs ready to bake

After baking

Ready to eat..............

Nothing better than a specialty bread.

Xmas breakfast here:

Chopped beef steak pieces simmered in a pan for 20 minutes.
If too much grease then drain.
Add 3 broken eggs per person, who's on a diet.
Add mild cheddar cheese, chopped, at the same time.

Add a little water, cover, cook till done.

Butter some of that specialty bread there, and steak n' egggs time.

 ;D ;D

Please let us know.  It isn't all that hard to make good bread, most anyone can do it. I have been doing it since 1986 when my dad had his own bakery.

Yours will turn out just fine, I'm sure.

As I write this I am about 15 minutes from completion of a loaf of bread I have cooking in the oven. This is just plain white bread but right out of the oven with butter waiting on the counter. MMMM......MMMMM......GOOOOOOOOD !!!!!!!!!!
