So far, some interesting feed back.

For me, at first, It seemed like a "reach".
Trying to turn a traditionally (for breakfast only) ingredient into a savory main course by adding a delicacy and some hocus pocus.
But after some thought it boils down to this.
Grits are corn, and corn is a starch like bread. It's like corn meal.
Well, I have had fried shrimp with a cornmeal batter.
If you replace the fat in the frying process with the fat from bacon and replace the cornmeal batter with grits.....
In theory,,, it should work as a valid dish.
I am going to have to give this a serious shot.
