Can anything be done to make liveUSB fstab changes persistant? Documents added to my home directory are. But changes to fstab are not, and I keep having to select the keyboard type over again too. Is this "normal"? Can anything be done? Would I have to uncompress, modify and recompress that giant KDE_0.sqfs file to make things stick?

If you are using persistence then the correct keyboard should be highlighted and need only a press of the Enter key to select.
The live system is designed to be used on different hardware and I have not come across a means of stopping it from behaving in this manner .....  in truth I have not tried very much.

There may be a means to do something suitable when remastering .....  check the help output for mylivecd to see if anything pops out.
